The Ambrosia Apple of My Eye
An apple a day keeps the doctor away... That is unless it's the golden apple of discord, coveted by three goddesses, and the impetus for the Trojan War.
Apples are high in pectin, a pre-biotic for friendly gut bacteria to feast on. Apples are high in fiber, antioxidants, and boron. Boron is a mineral that aids in the body's absorption of both calcium and magnesium, helping build and maintain strong bones and muscles. Since boron is not produced in the body, we must add boron rich foods, like apples, into our diet.
The Trojan War hero, Achilles, may not have worn ankle support, but he ate apples. I think.
I discovered a new varietal of apple, named for the food of the gods, the Ambrosia apple. I'm using it to modify typical American Ambrosia (marshmallow) salad recipes, which are typically unworthy of a deity's diet. This delicious recipe realigns the usage of the word 'ambrosia' back to its origin of meaning.
Ambrosia Apple Salad
Ingredients:
2 ambrosia apples, chopped
1 small pineapple, chopped
3 blood oranges, peeled and sectioned
1 grapefruit, peeled and sectioned
1 c. grated coconut
1/4 c. mint, chopped
Directions:
Layer the first 4 ingredients, chill 2 hours.
Add coconut and mint to fruit mixture just before serving.
Mix well, and bring to your next party!
