A Goddess-Fueled Recipe with Pomegranates (Part 1)

Pomegranates are rich in both historical and nutritional value. Greek mythos popularized pomegranate arils with the fate Perséphone tethered to Hades. But fear not, the consumption of pomegranates will not sentence you to a life in the underworld. From literature to art, pomegranates have been highlighted in the works of Paul Cézanne, Salvador Dalí, Henri Matisse, and Pablo Picasso. This timeless celebrity fruit holds the divine power of symbolism and storytelling across multiple cultures. Pomegranates are on the rise again, with their relatively widespread availability and incredible nutritional health benefits.

Pomegranates are high in antioxidants like vitamin C (hello tissue repair), potassium (good-bye muscle cramps), and fiber a.k.a. the gut health hero! Pomegranates potentially lower LDL (bad cholesterol) levels, reduce systolic blood pressure, and reduce inflammation. Also, they are delicious! The visual of their vibrant crimson color of pomegranate seeds initiate salivation, the first step in digestion. The crisp texture of pomegranates with a heavenly burst of fruit juice adds regality to oatmeal, salads, poultry, vegetables, and any dish that it touches. 

My favorite pomegranate dish is this superfood summer salad, paired with grilled chicken.

Pomegranate Quinoa Salad with Shaved Brussels Sprouts & Lemon

Ingredients:

  • Himalayan sea salt, pinch to taste**

  • 1 c. uncooked quinoa

  • 1 Meyer lemon

  • 1/4 c. extra virgin olive oil (EVOO)

  • 8oz Brussels sprouts, trimmed and thinly sliced

  • 2 scallions, thinly sliced

  • 1/4 c. chopped walnuts

  • 1/4 c. pomegranate seeds

Directions:

  1. Rinse and cook quinoa. Set aside to cool.

  2. Wash, trim, and slice brussels sprouts and scallions.

  3. Peel lemon and thinly slice. Juice lemon into a bowl through nylons.

  4. Slowly whisk EVOO into lemon juice, making a vinaigrette.

  5. Combine all ingredients, saving the vinaigrette for just before serving.

  6. Pair with a protein source of your choice to fuel yourself like a goddess.

**Use iodized salt if you have an iodine deficiency.
